Recently modified a friend's boom - just wrapped masking tape around to give a straight line then cut off about an inch of the boom, gave it a file to remove the burrs, and a quick coat of spray paint before letting it dry and inserting it.

It does mean that someone 6'7" or taller won't be able to use it, but that's not massively impacting resale.
A shortcut has to be a challenge, otherwise it would just be the way. No situation is so dire that panic cannot make it worse.

I have wondered about cutting the boom, need to make sure it's really needed first.
Can anyone suggest a water bottle holder and where to mount it?

There should be bottle mounts on the back of your seat frame at about elbow level, underneath the fabric. You will have to find them by feel. Just use a heated nail or the like to pierce the seat material. Any standard bottle holder will fit.
