I got into bike packing very recently, actually I only got into cycling less than a year ago. For me, it means riding without panniers and packing very light. My partner and I went on our first bike proper packing trip to Morocco which included bivvying in the desert and in the Atlas mountains. We use

Alpkit do some great kit too when it's in stock. You can read about the kit and see the set up on
http://www.farawayvisions.com/bikepacking-the-kit/I enjoy getting off road and as you have to push or lift the bike on occasion, it's so much easier without panniers. There is nothing special about my bike, it's a hard tail called 'Sally'. We are going to the West Coast of Ireland soon for our next big trip. The bivvy will stay at home. I'm too soft for all that wind and rain.
