Travelling in Scotland from Moffat to Livingstone I cycled 30 miles without seeing a shop. Supplies were also hard to find in Northern Scotland. Have you tried ski socks? They’re not necessarily thick but I find them warmer than eg merino.

For me. the ride was mainly about getting safely from one end to the other. Scenery would be a bonus. I followed A49 and A6 for much of this route without any problems. Took a few detours to use quiter roads that didn’t add too many miles.
