I use a Tubus logo with Carradice Super C and its top banana, it seems to keep the centre of gravity a bit lower the way the panniers sit which is good.

Good plan for your tour, you'll love it! The Rolls certainly suits me, Paul Hewitt specced it on my cheviot se when I bought it from him last year and its been great on several tours since.
