There should be bottle mounts on the back of your seat frame at about elbow level, underneath the fabric. You will have to find them by feel. Just use a heated nail or the like to pierce the seat material. Any standard bottle holder will fit.

I have a DD3 DualDrive hub that I've done 15,000+ kms on without any problems, plus whatever the previous owner did. The older DD2 can sometimes be a bit more susceptible to water ingress if it's not service regularly. There are still parts lying around on Ebay and in some of the older established retailers.
If or when my DualDrive turns up its toes I will just replace it with a 10 or 11 speed wide range hub.

I use compression tights, like they use in gyms, with shorts over them for modesty. I bought a size or two bigger than usual because I didn't need lots of compression. In winter I use thermal tights like they use for skiing. They are just cheap ones that I got from Aldi.

Try doing away with the noodle altogether. The cable stop and the brake look well enough aligned to run a short length of cable from the stop directly to the brake. You will need to use the end off the noodle that goes into the brake.

It's different but not so much so that it's learning from scratch. Many df riding skills carry over.
As a 60 something y.o. I tried to learn on a bike with a fairly reclined seat and a tiller steerer. I could never relax with the tiller and sold the bike. I then bought a Bacchetta Giro 26 and found the open cockpit much easier, but I've struggled with the high bottom bracket. I think a Giro 20 with its lower bottom bracket would have suited me better.
I might also mention that recumbent riding uses slightly different leg muscles. It can take a few months to develop your 'bent legs.

I don't have a SM, but with my trike with a 26in wheel I ran 48-38-22 (as best I can remember) chain rings which have me plenty of low range.

Power Grip straps are another alternative to consider.
You can DIY some heel slings from an old tube and some bolts or rivets to test out whether you like heel slings.

To my mind daytime running lights are more effective than flags provided they are bright enough. If you only ride a few hours at a time battery lights with solar or power bank back up will be fine.
As far as I know SON is the only manufacturer with a single sided dynamo that is suitable for trikes. There are some very efficient bottle dynamos available these days that you could try later. Consider what you need for charging phone and GPS. Riding for an hour or two probably won't be enough to charge your phone with a dynamo.

I ride on both hard shell and mesh seats. I find I get equally sweaty on both. The hard shell gives slightly better power transfer if the shell fits properly. If suggest you try both and see which is more comfortable.
I prefer all three wheels the same size. For touring it means you only need one size spare tyre and spare tubes.
With low enough gearing you can climb anything as long as you have traction and aren't in a hurry . I'd suggest go with the lower gearing.
