My 10sp Chorus short cage mech is happily running 13-29, with a compact (110mm bcd) 34/50, which works well for me in the Peak District.
Your BCD is very likely 135mm, I think TA do a 38t but there's a chance your chain will foul the tabs on the crank spider, just depends.
What kind of BB do you have? If it's square taper then beware it's likely to be ISO and might need replacing with JIS if you swap to a different brand of chainset, and there's a good chance Pinerello will use an Italian BB thread (70mm shell). This is definitely one to be sure to get right first time! [emoji6]

But in our defence I would say that we are trying to create an effective, comfortable, warm, easily maintained, protected from damp and condensation system of bedding that can see us through a huge range of temperature ( -5 deg C to +35 deg C?) while being carried on a bicycle, going uphill.
I haven't added "at a reasonable cost" as I think just getting the first lot right is hard enough. Cycle camping is surely a mixture of craft, experience, adaption and "technology". Given that many people cringe at the thought of camping, let alone doing it on just a bicycle, I think we are doing rather well and the obsession is fully justified.

While I've absolutely no doubt that thread will be both interesting and enlightening, the fact remains that they run & run (& run) in the harshest of conditions and when they finally do require attention, rebuild kits are readily available and you can have them back to good as new in the time it takes the kettle to boil. Was also going to recommend the indestructible DMR V12 (I use the newer shape Magnesium on an mtb and the grip is phenomenal and the bearings legendary), but no reflectors, so instead was going to suggest the Wellgo copies. My partner has a set of Magnesium Wellgo on her mtb and they have stood up to endless filth and pressure washing for year now without complaint (just the pedals, not her [emoji38]) are very light and are a bargain to boot (pun very much intended! [emoji39]). Those do have reflector mounts.
Hopefully the OP is sorted now (Shimano is also a great choice I think), but may be useful to someone else.

I remember one of the early mtb innovators, I think it was Geoff Apps (Cleland), advocating for the largest tubes you could sensibly fit, that way when they were pinched or came into contact with a thorn etc they would be under far less tension and wouldn't (necessarily) fail immediately.

BETD and gearhangershop.co.uk would be my starting points, but I wonder if that frame shares a hanger with any others, RetroBike might be the best place to ask about that. Otherwise, as a last option I wonder if 3D printing is an option option, rather than the usual visit to a local machine shop (with your old hanger for reference). There are people who specialise in prototyping who might be able to help with that.
Have you emailed Spesh directly? Never know what might still be in a drawer somewhere.
Good luck staying sane while trawling through Spesh hangers of a similar vintage!
