My MTB drop bar conversion was all done cheaply. The biggest cost being a new shorter quil stem to suit my reach.
I don't use the drops .... I fitted the original flat bar shifters down there.
For me, and I realise people have their own preferences, it's perfect

I know it's been said so many times before but 26" wheel drop bar MTB touring conversions take a lot of beating in both senses of the word.

I'm with 531Colin, rear spacing will probably be narrow so it'd need spacing out. I'd consider keeping front chainset, sa 3 speed and fit new chainrings to split the difference of the 3 speed hub

In my opinion it's dipped beam that's the issue, full main beam is only used when no one is around, road clear etc.

I use an old Shimano FD with 24-42-44, copes fine. If you're fitting a triple why not half step the gears and only use inner ring when you've run out of gears? I have a 5 speed block and ideally a 3 tooth step would've been ideal but wasn't readily available.
I now have 13 different gears from 15 available

Freewheels can last well. I run 5 and 6 speeds, never had axle issues. I think axles become a problem with 7 speeds.

You don't need to rectify the output from the dynamo for mr11 lights as I've previously used. . assume that mr16 are the same. I couldn't get low enough wattage mr16 when I did it.
Note that these lights have symmetrical beams so dazzle other road users

Slipping is as previously stated either requires adjustments or wear inside.
You'll not break one....chaps I knew tandem raced with aw3 fitted.
Lots of YouTube videos on strip down and adjustment.

Don't worry about the comments about low quality. If everything is greased/oiled properly it'll go on and on for ages.
I'd grease the wheel bearings properly....they never put enough grease in.
Adjust everything and keep on top of maintenance and it'll be fine

I have a similar age MTB converted to drop bar tourer.
It's a 15 speed so only 5 on the back.
I have 14-28 on the back and 44-40-24 chainrings.
Top 2 chainrings almost split the ratios in half leaving 24 chainring for serious hill duty.
From memory I now have 13 gear ratios.
It's super robust, everything's easily serviced and cheap to replace
