Fibrax https://fibrax.org/phone/index.html are good for this sort of thing.
It may just be my memory, but prices do seem to have crept up recently, but the stuff they produce is well made and long lasting.

Re: Grand Bois vs White Industries hubs vs alternatives..
In answer to the question about servicing and what tools are required for hubs. I’m afraid I don’t know, as I’ve never had to do anything other than very occasionally grease the rear freewheel. I do have the Royce kit for doing this, but it would be easy enough to come up with a homemade way to do it.
The sealing and durability of the hubs is very good and the bearings are of a very high quality, no doubt manufactured for much more demanding duty cycles than bike wheels, so service life is very, very good.
I probably grease mine more than I need to (once a year or so) just because it makes the freewheel a bit quieter.

Re: Grand Bois vs White Industries hubs vs alternatives..
I can vouch for the quality of Royce hubs. I have two wheelsets with Royce hubs. One is a disc set I had made for me about 11 years ago and use on my cyclo-cross bike. The other wheels are a pair I built myself three years ago for my road bike.
Neither set has ever given me a problem. They do take a few hundred miles to break in, but they isn’t to say they ride roughly until that point.
The freehubs are a little bit noisier than I would like, but nothing like a Chris King or Hope hub. I’m just used to the quietness of Shimano hubs.
I’d give Royce a call if you are interested. You’ll probably be able to speak to Cliff, who will be able to run you through the best options for you.

Re: Mystery creak
I'd suggest removing the pedals, clean and regrease all the threads and then reassemble everything at a decent torque. I have had a similar creak to the one you describe several times and it has always been the pedals.
