I'd go along with all of the comments you have so far - the canal is ok one way but If we were going again we would find a different route back.
There is a small resaurant/B&B in Melrand which was just wonderful .... particularly the 'rice pudding'.
Opposite the church .... Auberge La Tourelle

Arriving a little late but .... we went through a similar process a year or so back. Did a Breton Bikes holiday and decided we liked steel framed tourers, came home, decided to buy two new bikes and chose the Sherpa over the LHT after much deliberation.
Thorn's customer service was up to the standard we had been expecting, and every time I ride mine ... I smile ... a lot.

I have the Shimano R550 Flat Bar Brake levers on my commuter and they work fine with the caliper brakes - a definite improvement over the V brake levers they replaced.
