Modify panniers by moving track for lower hook down. But you will need to seal the 'old' holes for the mounting bolts.

I recall that I read somewhere that apple restrict their software on the ipad such that camera connection kit USB dongle can only be used to transfer photo or video files. Why not just ask the manufacture? I expect the German manufacturer will have a staff member who can reply in English.
