We passed a group from a company called Peak Tours whilst we were doing St Malo to Nice (unsupported), think they were doing Caen to Nice. They had a couple of support vans, but everyone seemed to just be meeting up at a couple of points (the van was set up for mid-morning, lunch & mid-afternoon snacks at various points). So fast ones could set off again without having to wait for the back of the group and vice-versa. They were a friendly bunch and even let us have a cup of tea and biscuit occasionally even though we weren't part of their group. Think they said they were doing northern Italy in 2017.

In the past we have used Saddle Skedaddle and other similar companies for self-guided tours in the past. These were basically agents for local tour providers once we got to the destination. We didn't have support vans/guides providing day-to-day support in terms of food, route etc, but we were given routes at the start of the week and just told to leave our luggage at the hotels we stayed in each day. By the end of the day luggage was in the next hotel. We also had a number to call in case of technical issues etc.These tours were good as they gave a safe well-trodden route without having to plan whilst making us feel like we were on our own journey.
