So just to clarify.....
Single sided pedals means you can only use shoes with cleats....?
Double sided pedals you can use regular trainers/shoes on the other side?

You could try letting a little air out & running them near minimum pressure instead of maximum. Personally, I would put some Continental Tour or Vittoria Randonneurs on there. And don't pump them up to the max recommended pressure. What pressure would you run them at? What is max and min pressu...

Just back from the shop.
So it’s either the escape 2 disk or escape 2 with rim brakes.
I’d prefer the rim as I think there is less to go wrong than the hyrdraulic calipers.....
