I'm not sure which bit you're planning on going to but if you like hills then I'd visit Ronda and the other villages around there. I particularly liked Arcos de la Frontera. There's also the Sierra Nevada mountains, which are a great place to cycle with gorgeous views and even better road surfaces. ...

Having a Spanish speaker with you will be very useful in the wilder parts of Spain. He/she doesn't need to know much but if he/she can navigate hotels and restaurants it just makes it easier for everyone. The only bit of my route that coincides with yours is from Ventas de Zafarraya onwards. From just after Ventas you get a lovely, long downhill, in fact almost (although not entirely) downhill all the way to the coast. I've never cycled there but have been three times for trips of three or four weeks each, once by myself. I never felt lonely. It's a great place. I really enjoyed some of the tiny islands not too far from Naxos although they may be too small for cycling. You'll have a great time.
