You could look at getting Flixbus from Amsterdam to Paris (https://www.flixbus.com/?_ga=1.117155590.1089700478.1470830857 - formerly Megabus) and then a regional train to Metz?

Only the UK owned express coaches in Germany don't take bikes! Postbus use the lockers but MeinFern/Flixbus use Thule carriers on the rear.
