The 105 groupset I bought from Merlin Cycles came with the inner gear cables already fitted to the shifters. KMC chain as well.

You can't fit a headset on from scratch with a set of allen keys.

Headsets are not included in most groupsets.

Sadly a groupset is no longer what it was. :(
I used to love looking at catalogues withe full groupsets in them in shining glory.

this isn't necessarily the case. Shimano make two 11s cassettes (both in 11-34T only) being

CS-HG700-11
CS-HG800-11

which fit to 8/9/10s freehub bodies and allow the use of 10s wheels with an 11s groupset.

cheers

Good to know

Cyclo-Benelux rear mech and Simplex front mech, Airlite hubs, Stronglight cranks
and rings, Strata bends and Reynolds seat pin and stem. Ahhhh the good old days,
before the product managers and their ill fitting groupsets, sort of like dressing
in boiler suits. :)
