where in London can you buy a city/hybrid bike for men that allows you to sit upright, like so many of the bicyclists in Copenhagen?

I don't know the London shops and you haven't said how much you want to spend, but the machine you're looking for is called a "Roadster", or preferably a "Sports Roadster" which weighs less but costs more.

Welcome to the forum. A quick google comes up with the Flying Dutchman.

Look for stores that stock Gazelle, Batavus and Koga cycles.

No personal experience of the store, other stores are available, will contain track nuts.

The store has changed a lot since it was born as "city&family bikes", used to carry the Azor dutch bikes which were really good, plus the obvious Gazzelle, etc.
It is by riding a bicycle that you learn the contours of a country best,
since you have to sweat up the hills and coast down them.
Thus you remember them as they actually are...

A decade ago you could buy there some very good quality Azor bikes for £3-400, very well made and spec'd.
Did I say "the store has changed a lot"? Worth a try tho, I haven't passed by there in a long time...

No worries :)

But bear in mind that brands like Gazelle/Azor/etc. they build quality bikes. Even if the components may seem "unbranded", they are actually well tried and tested.
I remember seeing the in-house tests that some of those brands would do: things like chaincase, mudguards, etc. had to stay for days and days in tanks filled with salty water, and come out in reasonable good conditions with no corrosion. Don't think can do it with the Decathlon.

I don't know about Azor but Gazelle are definitely quality bikes :)
That said Decathlon bikes punch well above their price point
