Take the lanes north then easterly to Castle Howard then head across to Malton. Avoids the A64 entirely and as Eden is north of Malton you don't even need to navigate the narrow, badly signed town.

Southerly routes are a bit spaghetti and will inevitably dump you on some main roads.

I ride with some people who know York much better than I do; this is our regular "York to the coast" ride https://cycle.travel/map/journey/45784 although we more often go via Thixendale than Birdsall.
However, this route out of York is magical, if you haven't done it before. Its worth concentrating and getting it exactly right, because you go right past the Minster on a "car free" route. Theres a tiny bit of main road before you branch off on Stockton Lane, which is suburban and OK.
To get where you want to go, after Stockton on the Forest I would go straight over the A64 to Sheriff Hutton, an "unknown" village with a big ruined castle with no public access and the church on a tiny lane is rumoured to contain the burial of an illegitimate son of Richard III, although the weight of evidence is against that. Then up to Terrington where there is a decent café at Yorkshire Lavender (have the raspberry cheesecake if they have made any); their grounds have sweeping views over the Vale of York, you can see the Minster and Sheriff Hutton castle as well as 3 power stations, their displays of lavender are worth seeing in the season, as well.
If you haven't done it, its well worth cycling up and down the road past Castle Howard; there are just so many monuments, lodges and other displays of conspicuous wealth that make to-day's Range Rovers look puny. From Castle Howard you can go straight into Malton ("The deli of Malton" if you want a recommendation for somewhere to eat) or if you like you can head North and approach Eden Camp from Ryton....Or there's Kirkham Abbey......

Thanks for the advice chaps. A diversion to Kirkham Abbey sounds interesting so that's the way I'll go.
