If anybody knows of some nice rides around the West Sussex area that there are GPX files for, ideally fairly quiet routes of either country lanes or gravel rides and not tooooooo many hills between 30 and 60 miles they could share I'd be really interested.
I'm based in The Witterings 8 miles south of Chichester and don't mind driving about an hour to a start point and am ideally looking for something relatively scenic as well.
If anybody wants some rides in the immediate area from The Witterings up to Goodwood let me know and can share them.

Have you tried using https://cycle.travel/ to create your own routes?

Sounds like you want routes somewhere on the Coastal Plain or Low Weald, but not in the High Weald or South Downs if you don't want hills.
You could also take the bike on the train rather than use the car.

I did the Bosham Circular back in May:
https://www.komoot.com/tour/68767867
Great route, which I chose as my other half is a beginner cyclist. It was really flat, a mix of on / off road and you even get a short ferry crossing to boot. The route above may need a slight tweak after Bosham. We ended up going through a field track that was heavily overgrown - I have a gravel bike but had to push in the end. Also, we missed the last bit off of road route and ended up on road. I'm not sure whether those errors are in my gps map or just that I took the wrong turn. We were able to stop in Bosham for coffee and cake too.
You can extend the route in a couple of way:
Start and end in Chichester itself rather than the harbour. I mapped this out so you do part of the canal - https://ridewithgps.com/routes/30064105.
Takes in West Wittering - https://www.komoot.com/tour/68211170
I haven't tried out the last two - they were just alternatives for if my partner was a bit more confident. I used a combination of resources to figure out the routes - the Bosham Circular is available as a downloadable leaflet on a local website. I then used Ridewithgps and Komoot to make any tweaks.

These were when I mentioned if anybody wants any routes around here to let me know as know them like the back of my hand .... if you want some others that go across to Medmerry through to Sidlesham, up through Mundham to Chichester and depending which route you take can easily vary it from 30 miles of completely flat through to 45 miles taking in some hills around Goodwood .... the uphill is hardish but you get a massive downhill afterwards that makes it all worth while
If ever you're this way and fancy tagging along let us know.

If you don't mind travelling a short way to the start then you could try Portsmouth CTC, rides starting from Havant.

This is a route I use a bit. Lots of countryside, lots of views, a couple of nice pubs en route, it starts and finishes at the Goodwood motor circuit. It’s a paired down version of a much longer route.

Here’s the ‘full fat version’. About 100 miles, and some very testing hills.
