V interesting for a project I have going on!

So you want to hold down the V-brake Noodle so it all fits together nicely on the bar.

My suggestion would be to pad the noodle underneath with an excess of bar tape, then clamp and compress the whole lot down with 3 or 4 cable ties then bar tape over the top.

Jubilee clips aren't pretty, granted, but you need a fixing of some sort to hold the thing to the bars, jubilee fixings aren't much bulkier than those SJSC clip fixings.
These guys http://www.westfieldfasteners.co.uk/HoseClip.html have stainless clips in profusion....I think noodles may be stainless?...You could use a stainless jubilee clip, put the worm drive screw at the front/bottom, screw head down/back, silver solder a noodle to the worm drive housing (or the band next to the housing, depends how it lines up) then all you will see is a stainless band and a noodle. Need a reasonable contact area for silver soldering safety dependent stuff...maybe solder a M5 nut to the band, groove the nut to take the noodle?

On the other hand I have seen stainless zip ties somewhere.....OMG!!!  ....there's thousands of them...http://www.hcl-clamping.co.uk/index.html

Silver soldering stainless is pretty easy. Need to find a way of holding the bits together. http://forum.ctc.org.uk/viewtopic.php?f=1&t=49335

Not sure whether it would work, but what about heat shrink tubing from Maplins?
