Wanted to make some pancake mix to cook this evening, only had old uht milk (05.6.2018)
It was cheesy, slimy. Buying some fresh today, learnt that even uht milk goes off

Pancakes = fried porridge?
Just made pancakes with wholemeal flour plus OATMEAL! Either I was lucky, or oatmeal is a magic ingredient, the result is perfect

Cyril Haearn what proportion of oatmeal to flour did you use? I could experiment of course but easier to try somebody else's experience first.

Maybe 15% oatmeal, the end of a packet (I use just a little in porridge)
Used a sprinkling of fine oats too
The dough thickens up while standing, I always leave it a while, oatmeal absorbs moisture
I shall try with a higher oat factor, as Pete notes above, there are many other possibilities
Just got six pancakes as bread substitute for the next couple of days, +1
