I've eaten them peeled in a salad, very nice and a more delicate flavour. Broad beans when young are nice with the skins on but when they get old and large they should be put onto the compost heap.

Foul Medames (medammas) take the bigger, tougher broad-beans and make something delicious of them - learnt to enjoy them when I was in Egypt. Slightly unfortunate name tho'. Serve with hard-boiled eggs, dress with olive-oil, parsley & lemon-juice. Definitely not peeled.
