I don't know what display technology your iPad uses. Some of them have things like polarising films in them, and liquid crystals that have funny optical properties.
I agree it is an interesting phenomenon.
Edit: googling for "Do liquid crystals exhibit birefringence" seems to return a number of results that say "yes they do", so I think my guess may be right.
Of course if you say that your iPad has an OLED (Organic Light Emitting Diode) display, that blow that theory out of the window!
