Happy Christmas and a Prosperous New Year to all my fellow CTC Forum members. It has been an enjoyable year reading the threads and I have learnt a great deal. Safe cycling in 2010.

Nadlog llawen and seasons greetings from the snowy hillsides of Mid Wales. The tradition here is to go on a 20 mile ride on Christmas day but the roads are all iced up so will have to put the old walking boots and go for a bit of a hike. Hope its been a memorable years riding and keep those pedals turning.

What's everyone having for Christmas Dinner today?
We're having Samosas, from a recipe we were given many years ago.

SAMOSAS

INGREDIENTS - Pastry
6oz Plain Flour
6oz S/R Flour
Milk
Water
Seasoning
1 Egg, beaten
3oz Melted Butter


INGREDIENTS - Filling
3 Tblsp Veg Oil
1 Tsp Ground Turmeric
6oz Onion, Chopped
2 Cloves Garlic
21/2 Tblsp Des Coconut
1lb lean Mince
2 Tsp Coriander
2 Tsp Garam Masala
1 Tsp Paprika
5oz Plain Yoghurt
2 Tsp Curry Powder
Salt
7 oz Tin Tomatoes
1oz Sultanas
1 Lemon


PASTRY - Method
1. Sieve together plain and self-raising flours and seasoning.
2. Blend in beaten egg.
3. Make a firm dough by adding milk and water slowly.
4. Knead for 7 minutes.
5. Cover with a damp cloth for 1 hour.
6. Roll out to 1/4 inch thickness.
7. Brush with melted butter.
8. Fold the dough in half, brush again.
9. Fold in half again, brush again.
10. Roll out and repeat three times.
11. Finally,Roll out VERY thinly and cut into 3 inch rounds.


FILLING - Method
1. Mix together mince, coriander, garam masala, paprika, curry powder, salt, tomatoes, coconut, sultanas and 5oz yoghurt.
2. Heat oil to very hot, add turmeric, onion and garlic.
3. Stir until onion is almost burnt.
4. Add mince mixture.
5. Turn all together, reduce heat, and simmer for 1 hour, adding a little water, if needed, to keep moist.
6. Cool, and then stir in juice of 1 lemon.


ASSEMBLY
1. Place a spoonful into each round.
2. Wet edges, and fold into crescent shape and chill.
3. Heat oil to 385 degF.
4. Deep-fry until golden brown - about 31/2 minutes.


Serve with dip as follows:
Mix together 5oz Plain Yoghurt, a finely chopped Onion or Spring Onion, chopped cucumber and fresh tomato.

Even though I asked for nothing, Mrs W got her psychic radar out, and bought me a totally unexpected present which was fab - a TACX turbo trainer :D

I've not cycled any distance for some weeks, I hate to think what I weigh now.
(Don't ask what I've been eating over the last day or two, or what I'm going to eat over the NEXT day or two!)

It's been self abuse in the tummy department here, well and truly stuffed!
I got a double CD of Chris Rea greatest hits, two tickets to see Chris Rea at Oxford. I wonder who I shall take YEOWCH!
Also a USB memory stick to replace the one I lost recently.

Dr Who was gripping and James May was throughly entertaining.

I have just been looking on the Ticketmaster website to see who's appearing this coming year, Moody Blues in September. MiLady asked me to please not look at that site??? It's my birthday in 2 months :D :D :D I wonder who we are seeing?

We have my children over tomorrow. I have the latest Harry Potter DVD for us all to see and a board game to play.
Nothing bike related or Hornby shaped, ah well never mind.
