Looking for information and routes, I would prefer to stay "on road" with tarmac using a road bike with 25mm tyres so no cinder or gravel tracks. Will be using a motorhome for accommodation en route so would prefer to steer clear of big cities.
Any links or web sites I can research would be appreciated or indeed places or roads to definitely avoid.

There are the Eurovelo routes that run down the Atlantic coast and through Portugal.

I don't know the Atlantic coast route but the Algarve cycle route has gravel sections, including one through the ruin of a house and down gravel banked up against a six foot wall, so I'd be careful about following Portuguese signposted routes if you can't ride gravel.
