I've cycled a lot of Spain, including a 'lap' of it 3 years ago. As mentioned, the west coast of France is easy riding. However, Spain is very mountainous and difficult to avoid them unless you stick to the Mediterranean coast.

If you are a bit more adventurous and want to make your own way just stay 20 or 30 miles in from the coast and plan each day using a simple Michilen map choosing minor roads.
I've riden the inland route many times heading to and from Spain, either way is easy, plenty of campsites and accommodation. My preference is unplanned quiet routes taking each day as it comes just stopping when I get tired and see somewhere I want to stay.
The Euro velo route is easy but some sections are unpaved and sandy that wrecks your chain, lots of cyclists do use it and you will always meet people if you like that sort of thing.
France must be one of the easiest countries in the world to just go without a plan, not as easy to camp as it used to be due to the closure of many municipal camp sites, although in some cases I just camp on the sites without facilities, no one seems to mind.

But one thing I would say is that personally I find the section running down the coast - Vendee etc to be a bit mind numbing. If you find the same it's easy to use that Michelin map 'Phil' suggested (the yellow series - try to get the waterproof ones) and cut 20 kms and hit tiny quiet lanes and less travelled villages...

Just a thought but there's become a craze for taking your year of birth and following the TdF route for that year. Make a nice hook for the trip? Have a look at the Eurovelo routes as they make a nice basis, though there is a tendency to be a bit 'easy' at times, but it's easy to detour... - http://www.eurovelo.com/en/eurovelos

Morocco and fly back.
Planned this one out but ended up cycling to the Alps for work instead.
Looks an incredible and varied route and easily doable in 2 months!
