I don't think anyone's mentioned AirBnB yet. This massively increases the options for overnight stays in a bed. I used it extensively touring in France last June and rarely booked more than a day ahead, often booking at lunchtime for the same night. A wide variety of possible berths for the night from rooms in people's houses to apartments to 'professional' Gites / B&Bs. The proprietors don't always speak English so polish up your rusty French!

We will be heading to France for 6 weeks in May. We have found that the lodging/camping feature on Cycle Travel to work well. Also Warm Showers.
