The assembly required is usually to turn the handlebars, insert seatpost and attach pedals, plus sometimes fit the front wheel. There should then be a Pre Delivery Inspection (PDI) but this is where those competing on price are likely to skimp.
I've seen bikes delivered in boxes that don't look like they've been opened in the UK. There's a bike shop near me that offers a set up service for bikes bought from the discounters, I think they charge £60 if all goes well.

I don't tend to buy new bikes for myself (I build my own or get them second hand) but the immediate move of change saddle, pedals, tyres and then maybe handlebars is pretty classic.
That said, I would expect bog standard cheapo pedals to at least fulfill their role. If you sell a bike sans pedals that's fine; if you sell it with pedals, they should work. If you're a shop that sells bikes you should be able to swap a defective pedal with another pedal from your big box of bog standard pedals.
If I had a baby elephant, I would put it on a recumbent trike so that it would become invisible.

I know a colleague who was asked to return a whole bike to Evans Cycles for a pedal issue on a newly delivered bike.

GO are not unique in that.

Interesting, my experience of Evans is that they actually have cyclists working there and work more like a bike shop than that. But then this predates their purchase by Sports Direct.

Over many years I have shopped for cycling and walking kit at a variety of outlets, starting with surplus stores after the War. I use Decathlon these days - a handy store and a chance to try everything on before buying. They are good value for well made gear. Specialised cycle components I now buy online if the LBS does not have.

Apparently their colindale north london store is closing down.no idea why, they are light on stores london way.
