First Day

We want to cut the first day shorter (concerned about the level of difficulty ) but are having trouble finding a place to stay overnight . Are there B&Bs or campgrounds in between King Harry Ferry and St. Austell?

How hard is that first day fryom Land's End to Fowey?

I would go this way.

Not too hard at all.

Cornwall = hills, you can't get away from this fact, but the route I show is as good as you can get.
LE to Penzance town centre
A30 and peel off into Hayle town centre, then out via Connor Downs to Camborne and Redruth. Go through the towns and not the by-passes.
Scorrier, Chacewater and Threemilestone into Truro, then to St Austell via the A390 but you can get off it a bit if you want. Go through Probus and Sticker as it's easier.
Then via Par to Fowey.
