If it's still on Amazon Prime, there's a fantastic series by one of the TdF team chefs who takes you through what they eat, and crucially why.
She only gives the sprinters gels as the glucose arrives and departs the blood stream at roughly the same rate and isn't good for the digestion. Most of the riders get cakes, sandwiches and flapjack like things.
