I found this saddle in a garage growing some interesting microbiological specimens.
Could anybody suggest the best way to clean it?

I'd start with a stiff bristle brush to remove the mould.

I'd suggest being gentle.
I had mould on a saddle left over winter and it cleaned off OK. Admittedly not as bad as yours.
The mould is only on the surface. Wipe what you can off with soft cloth. Then remove rest with only very slightly damp cloth.

Didn't take much to clean it up. Kitchen paper did most of it. I'd love to have sent off a swab to see what it was.
