Brakes: Cantilever or 'V'

Advice please: I am considering renovating an old touring frame, getting extra braze-ons and a respray. It is a good opportunity to get brake bosses welded on. But then do I go for Cantilevers or 'V' brakes? If I go for for the former I will need a brake bridge on the rear triangle.
So, can anyone offer any advice on the relevant merits of the 2 braking systems on touring bikes, please?

Cantilever if you want dropped bars, V if you have flats.

All the things that make Vs work with drops degrade their performance below the level of decent cantis anyway.

Straights! I gave up on drops some time ago due to discomfort in upper back.
So it's 'V's then. That'll save on the cost of a rear brake bridge.
