Does anyone know if, say a 105 or Ultegra 11 speed cassette will fit an 11 speed XTR hub?

No.
The XTR 11 speed cassette is interchangeble with other 8/9/10 speed cassettes for corresponding Shimano hubs with no modification, as indicated in page 1 of the current Shimano compatibility chart at: http://210.168.79.135/download/pdf/com/1.0/en ,
while, as we know, the 11 speed road cassette would have been too wide.

I think they have a huge dish on the XTR 11s #1 sprocket, and because it is so large the mech doesn't hit the spokes, even though the sprocket pretty much overhangs the spoke flange. This allows the XTR 11s cassette to fit a standard freehub body.
If you have a very small #1 sprocket you can't pull the same trick, so road hubs have to be different, with less dish on the #1 sprocket and a wider freehub body.
For aftermarket hubs the situation is complicated; for example there is a whole page on the Hope website about the changes they have made to allow 11s compatibility.
For a component that is going to wear out in as little as a few hundred off-road miles, the XTR cassette is ludicrously expensive.
