Even though I have never used it, mine is probably this - the Park Tool MT-1.
It's cheap, simple, small, light, made by Park Tools and it could save your bacon while out riding.
This one small thing covers probably 95% of the bolts and nuts on a bike.

Torn between choosing that or the Joe Blow in the bike shed which I’d also hate to be without.

The issue with multitools is that they rarely have all the bits you need, and often have bits you never need.
That Park one at the beginning. .......... What are the 8mm, 9mm and 10mm sockets for?
My favourite tools are a full set of Allen keys.

A Campag peanut butter spanner.
Make a statement and attach it to your saddle rail with a toestrap. It's a useful handle to hang onto. and being 15mm it fits your wheel track nuts.
It came with the crank removal tool. Originally designed to fit the 15mm crank bolt. Nowadays they are 14 mmm or Allan bolts, so these spanners are almost obsolete. Or use it for it's intended purpose to spread some jam on your toast.

The Campag and the Park are favourites of mine too.
The Park is a saddlebag tool and the 8,9,10 mm. sockets fit many brake and gear cable anchor nuts,
It is a much better version of the old dumbbell, of which there are many shoddy modern versions which break easily.

Seems I'm out on a limb?
No nuts of any diameter on Mercian, and only the rear 15mm nuts on Moulton's rear SA hub.
I have a saw-off 15mm ring spanner in the saddle bag for those.
Other than the 15mm nuts, the rest of the fittings and fixtures are Allen keys on both bikes.
Best idea IMHO, is to use fittings and fixtures with the same sort of stuff.

The question is about favourite tools, not universal tools.
Your sawn-off spanner would be no use on most of my bikes, but may be your favourite.

Fits it all.

Cheap equipment still uses hex nuts on things like derailleur cable clamps.
After the Park Tool it would probably be this - less than ten quid, Bondhus allen keys (1.5, 2, 2.5, 3, 4, 5, 6mm)
It's claimed these are just as strong as individual allen keys.
