I am looking to purchase a new folding Ebike, can anybody recommend one at between £1000.00 and £1500.00.
Your help would be greatly appreciated.

Wisper 806 are also good. Not available from Wisper themselves at the moment.

and I've heard they are good to deal with (no personal dealings with them).

It depends a lot how you want to use them; whether you need them to fold really small or just fold.
Battery size you need depends on the kind of terrain, how much assist you want, how heavy you are, and of course how far you want to go.
Many firms advertise absurd 'up to' ranges which are for light riders using minimal assist on flat perfect roads in good weather. Real ranges are typically around 1/3 of quoted 'up to' ranges even with just medium assist.

You won't get a Bosch bike, but their range assistant (https://www.bosch-ebike.com/en/service/range-assistant/) gives a very good idea of expected range for most bikes, and an even better idea of how much difference there will be in range according to conditions. If you put in optimistic settings for speed, assist, hills etc you will easily get range estimates over 100 miles on a 400wh battery. Fiddle a little, slightly faster speeds, heavier rider, medium assist, some hills and some wind and you'll see the estimate quickly drops to maybe 30 miles.

On purchasing an ebike do you know if you are exempt from VAT if you are disabled please?
