Try the cycle.travel/map website and the 'suggest a ride' option. Drag the scrollbar to increase or decrease your ride length preference;

Just a suggestion, I know very little about that area of the country,
All the best, Simon

Can second this site - very good. Predicts quiet rides in my neck of the woods at least.

The Queen Elizabeth Olympic Park is suitable for short casual rides. It also give access, travelling northwards, to the off-road Lea Valley route to Ware and Hertford. Going south via canal towpaths, such as Limehouse Cut, and minor roads you can cycle by the Thames to Tower Bridge. Some interesting pubs such as The Prospect of Whitby.

I seem to remember East London is a crime hotspot so where ever you cycle there be careful and keep an eye on who is nearby. The lee and stort, there is a section near a park there by the side where muggers are known to hang out such there is a notice to that effect
You dont have have pre planned routes just use your bike to explore the local nooks and crannies, that can be fun and a good use for a bike since walking is so slow
