I would pick a coastal route over an inland route. Some of the coastal roads are pretty busy, and I imagine that has influenced the route choice on cycle.travel
The scenery on the western coast of Norway is stunning, and not to be missed. An inland route would miss the very best of a beautiful country.

The other thing is that an inland route is likely to be mosquitoey in summer. The high fjell can be interesting, and it might be worth including some in a tour, but you can do that a couple of different ways, without taking an inland route. There's my previous suggestion of cycling Rallarvegen between Haugastøl or Finse and Flåm, then taking the ferry to Bergen. The only advantage of an entirely inland route, to my mind, would be that it will likely be much easier to find good spots for wild camping.
