Bearing in mind the opening of the new section was put back a few times, I'd take that with a pinch of salt. I drive the new bit regularly and the new bit's not completely finished yet. Some are the bridges across still aren't done and don't look to be progressing particularly quickly. You've managed to avoid Northwich which is good as its very busy with traffic and generally horrible. The roads and villages to the east are quite nice byley
Lach Dennis pickmere or even Knutsford and go through tatton Park could be an alternative if you want to avoid canals.
I'm in the process of planning myself. Probably going to go the east coast route

Yesterday when I drove east along a three mile coned off section, there were more of the Highways staff planting trees and gardening than seemed to be working on the bridges.
