My Aldidl cycling shorts are wearing out.
So is my backside.
I would like to find some new extremely well padded shorts.
Does anyone have any recommendations?

Tried some a few years back and the straps were far too short.

And comfortable saddles generally need to be the right shape rather than have lots of padding, and that's something to find out by sitting on numerous examples. You can get a sit-bone measurement in many cycle shops which can cut stuff that almost certainly won't work for you off the shortlist, and you can get an idea of well-regarded options from reviews, but still the case you need to sit on things yourself to see how good they are as different folks are different shapes down there.

I have a selection of saddles and I need padding for all of them.
My main issue is that I have a very bony bum.
I never needed padding as a teen, despite the battered saddle on my then bike.
However since I took up cycling again in my 40s I have used padded shorts and find them helpful.
So back to the original question - supplier of substantially padded shorts, please?

I like the Endura FS260 range. Other people speak very highly of Assos, but I've never tried them.
As an aside, I'm not sure that the boniness of your bum has anything to do with the amount of padding you feel comfortable with; or at least it's certainly not as simple as "less padding on the body needs more padding in the shorts" (and vice versa).

I think Decathlon is the best choice these days for decent bib shorts with high quality pads.
Look for the Van Rysel branded models that come with the 2.5 HD pad, or the Elastic Interface pad, the very same pad that you will find on premium bibs by fancy Italian brands at prices three times higher.

The most comfortable saddles - long term and long distance - are those that flex in use but also gradually adapt to one's nether. One's bodyweight is benefiting from compliance effects, both the flex (suspension) and the moulding (spreading the weight so high point-pressures are eliminated).
The same applies to any pad in the shorts. Basically the pad needs to not have rigid parts (like a central seam or too thick & inflexible padding) and should adapt to the shape of ones nether without forming creases or folds.
How to find them? Trial and error - although certain features such as too much padding (in a saddle) or pads with big gaps between distinct padded parts (in the shorts) should always be avoided.
At bottom (ha ha) the best way to comfort is a great many miles. One's nether can adapt to a surprising variety of seating, even though it'll do so far better with some than with others.
A final possibilty - a suspension seat post or some other bike-aspect that will increase compliance (decrease shocks and vibration through the saddle to the nether).
It all adds up! Some spend more on the saddle, post and shorts than on the rest of the bike!!

Just lost 20kg by using one of these new weight loss drugs (tirzepitide). Before the weight loss I was happy with a Selle Smp Nymber saddle. After the weight loss that saddle caused considerable problems. So I've gone back to an old Spa Nidd saddle, which is now perfectly comfortable.
So whilst your thinking may be that your bum is boney, its very likely that you haven't tried a sufficient variety of saddles.

Endura Pro SL for me. They are so comfortable that I hardly know that I am wearing them, which is how they should be, perhaps!?

I use the Endura padded boxers, you can then use any shorts you like over the top.

At the moment I am wearing them over Lidl shorts and that is working pretty well.

I still loved them! (although I didn't specifically want a thick pad, they just seemed to work for me)
BUT NOTE their latest high-end models* have changed completely. It looks like the old style are still available, they look like these:
