Another vote for Vittoria Randonneur pros, another option which I find comfortable are Marathon Supremes, they're also light.

One consideration might be the minimum pressure. I had some Vittoria Rubino Pro's that had a minimum inflation of 115psi. My portable pump could only make it to 60 psi. On tour they ended up substantially underinflated until a better pump was available. Your also more vulnerable to a cycle of pinch flats. The equivalent marathon + have an 80 psi min so should do much better.
