Maps & Advice for South America Tour

I'm joining 3 friends on a tour from Cusco, Peru to Rio de Janeiro in Brazil. We're estimating it's 2800 miles and we've got 3 months to do it. We fly out on 22nd September and arrive back in the uk on the 23rd December.

We've got a rough idea of the route we're taking (after finding out our original route went through 500 miles of swamp).

I was hoping someone might be able to give us some advice or point us to some resources. In particular, the maps we have are very large scale road maps. Does anyone know a good place to buy maps of this region? Any advice on GPS systems? What food will be avaliable to us? We're intending to camp wild for large portions of the journey (no other choice really!) Are there legal issues with this? Finally, we'll need travel insurance. Can anyone recomend a company/policy that would cover cycle touring in south america?

Lots of questions I know, but we're off in 6 weeks and I'm getting a little scared now!!!! :-D
