https://www.youtube.com/watch?v=6OocYpHXJ3YThe button engages on the ratchet. When you press the button, the spring-loaded pawl attaches to the first tooth, and will go unimpeded all the way round. With 10sp there are nine teeth.
As I said, these are my second pair of Ergos. 9sp 2004, and 10sp 2006. They are both identical in operation.
The
only differences in the internals, is that the Chorus and Record versions have ball bearings in the housing for the shafts. (Actually, the Record has a perforated ratchet unit as per the above video, but its profile is identical.)
10sp nine clicks
9sp eight clicks
All the way in one single pass of the button.
This is the same for the LH Ergo too, as they LH and the RH are identical mirror images of each other.

Long story, but my original YouTube channel under MercianMick won't let me in, I reckon my account has been hacked somehow and although they recognise the email address, they won't accept my password. I can't reset it, because they have a different phone number in there and they need to verify it first. As I don't have the number, I can't verify myself.
Any road up, I've opened a new account with a different email address and uploaded a video as requested. It's a bit rushed, so I say at the beginning to demonstrate "Ten Clicks", but there are nine of course. Also, on the second pass, the eagle-eyed amongst you will see I did a double click at Click Eight.
However, the first counted pass and last counted pass are spot on.

My experience of the pre-QS Ergos is that its an internal ring which splits rather than the G-Springs wearing out. That ring is available as a spare, and can be replaced as part of the dismantling to change the G-Springs (which may as well be changed at the same time).
I have two bikes with Ergos, one which is Campag 10 speed throughout, the other has a Shimano eight-speed mech on the back shifted with a Campag 10 lever.

Does anyone know where to get 10spd ratchets from so that I can upgrade from 9spd?

I got my set of upgrade bits from Mercian. It was more than one bit, but I cannot remember the exact number. I'm sure the Mercian Campag expert will advise.
EDIT : Looking back I see you got some parts from Hewitts. I'm sure that they will sort you out for the upgrade parts.

Looks like I'm half wrong here.
My Record and S.R. 11 would definitely don't do that.
And the Chorus 10 starts to pull the rubber hood if I try to press more than the 5th click. Perhaps "technically possible", but is it really "feasible" when riding? I can see that you can do that movement, but you're not holding the shifter.

I'm on my second set of Campag hoods with these Chorus ones, and they have a slot in them to allow the button to travel fully. If yours fouls the hood, you haven't got a genuine Campag one.

Yes, I can change all the cogs when riding. I can go from big cog to small cog, but rarely do them all. Maybe five or six as a normal maximum. I can still do them all though if I wanted.

Just dug an old one out. This one is a LH hood, I bought new pair because the RH one was torn a bit.

Or it's the one designed for Mirage etc. Just found that out to my disadvantage while rebuilding my 98 Chorus Ergos...

The ergopower parts seem to be tightly controlled by authorised stockists - of which only a few as far as I can tell.
You will be wanting the 10-speed Index Gear and the Ratchet Ring, which you will be able view on an appropriate Campagnolo Exploded Parts diagram for your Ergos.
