I would suggest you consider a route in Scotland. Easy to get to from Winnipeg and you can get into the countryside quickly from the airports. If you have two weeks you have options about your route rather than following a fixed route. Have a look on this site for ideas. re highlands and islands, whisky trail, north west 500, the borders and maybe into the lake district.

Yes, go Scotland! Fly into Glasgow. Wheel your bike full assembled onto the train in Glasgow. Get off in Oban and take the ferry to Barra and head north. A week in the islands. Off at Stornoway and a second week in the northwest finishing at Inverness for a train back to Glasgow.

They will need to cycle to the station though won't they, you can't get on a train at Glasgow airport can you, isn't Paisley the nearest at a mile or so away?

If you want to walk or cycle to Glasgow Airport, the good news is that we are connected to a local footpath network and also the National Cycle Network

Sure, but unless you want to wheel your bike for over a mile you cannot realistically wheel your bike from the airport to the train, it is well over a mile. It's a ride away.
