Upgrading Pinnacle Arkose to 105 and Hydraulic Brakes

I've been offered a 2nd hand Pinnacle Arkose 1 fairly close to me 2nd hand, the guy just wants to get rid of it, I've said he could get more for it than he's prepared to let me have it for on e-bay / elsewhere but he couldn't be bothered with the hassle / timewasters.
This'd also suit me at the moment as I'm on a budget, does anyone know how easily I could upgrade it to half decent hydraulic brakes and 105's later on when funds allow, if it could be done in stages ie. brakes 1st and gear set later (or if would have to be done all at once) and roughly what it'd cost to do for parts and labour.
The place I use for labour are more than happy for you to source cheaper parts on the internet if you can and then they just fit them.

https://www.evanscycles.com/en-fr/pinna ... e-EV306244EDIT: I've just google the cost of the parts and unless I#m mistaken they're about £732 altogether which kind of means it's probably not worth while when you add some labour cost on top .... would almost be better waiting to see if they have any left over end of season and probably be the same cost but brand new and without the headache of getting the work done.

you may find that the extant parts are perfectly adequate once they have been set up and serviced; what is on there at present?
What are you going to use the bike for?
The other things are that
a) you might not like the bike anyway (folk complain that this model rides in a fairly lifeless fashion) and
b) the shimano hydraulic STIs have a rather peculiar shape. Like most hydro STIs they are at best an aquired taste looks-wise and beside that some folk just don't get on with the shape of them either.
Like you say in your edit they are an expensive 'upgrade' too.

Brakeset Tektro Spyre mechanical discs w/ 160mm Rotors ... copied straight from the spec but that doesn't mean that much to me, I did test ride one a while back for sizing and said there's no way I'd spend £875 for a new one when the brakes were so bad ... unless thy weren't set up well ... I save up and buy one of the higher spec models instead.
Bike will be used for road / gravel riding year round.

just get some BB7s and be happy.
Or if you desperately want self-adjusting pads (that wear out without warning BTW) and you are prepared to live with the finicky setup, some TRP HyRds.

The brakes could have been set up badly, but almost certainly the pads will not have been bedded in unless the staff had been borrowing the bike to go on bike rides. Either and or both would explain poor braking power. Having said that I own a couple of sets of spyres and I'm not overly impressed with quality control. They can work great though.

Any ideas if I decided just to upgrade the brakes and leave the gears as they are what I could use as this may be an alternative which would be good and ideally not cost an arm and a leg .... if I found I couldn't get what's on there set up right?

I've got an Arkose 1 and the brakes are absolute pants. Do not inspire any confidence whatsoever.
Mind you, mine's a 2015 model with Tektro Mira brakes, which are probably even worse than the Spyre.
I also thought about upgrading the them to hydraulic but ruled it out due to cost. At some point soon I'll just upgrade to a new bike entirely.
