unless you are actually racing (in which case 'performance is King'), probably it is mostly a pose to have expensive wheels. Whether they are actually any good or not is entirely secondary to how much they cost, and how big the stickers are on them that say so.
FWIW routinely riding around on deep section rims is a pretty dumb idea IMHO; at best the benefits are slight and if it is at all windy you are likely to both
a) get no advantage (in fact you may go slower) and
b) be a hazard to yourself and others; no bike steers better with such wheels fitted, not when it is windy.
Oh the joys of kit like that...smashing fun!.....a single pothole can cost the price of the wheelset!

A rare occasion where Brucey and I are in agreement
A second set of wheels is always useful to have. But when you have a grand's worth of 55mm deep section carbon wheelset as standard, what I'd rather be looking for is a cheaper set for everyday riding, as opposed to an even more expensive set which offers no apparent performance upside, but plenty of downsides, as Brucey points out.

I'd be more bothered about whether I have 'campagnolo legs' than whether the wheels are top-end (as long as they are round, true and safe - not the legs you understand!

They’re not made of paper mache. Unless crashed, they won’t fall apart at a small knock. This bike won’t be out in anything but the best high day and holiday weather, so strong side winds won’t be a major concern. I like riding long distances, including the biggest hills I can find en route, so the better performing the wheels are, the better. I’ll have to wait until the bike is with me, and I’ve actually ridden it, to judge how far away from what the bike deserves, the stock wheels are.

That’s primarily why I’ve gone for this specific bike. The last time I rode a Campag tart, was in the early 1990s. That was quite an eye opener, I’ve not ridden anything like that since, I’m intrigued to find out how things have changed in the intervening years.

I’ve not been massively impressed with anything I’ve tried from hope thus far. Don’t get me wrong, they’re not bad at all, just not as great as some try to make out.

Unfortunately lock down prevents that right now. I have got my eyes on a 108 night world cruise in January, if circumstances allow, whether that’s her, me, or both of us, is still debatable.

If you 'really' want to push the boat out, why not get a pair of wheels built around the Gokiso hubs

But, as others have said, cost doesn't necessarily directly relate the performance, even if not everybody is taking that on board.
there's even a swiss made wheel you can get that's covered in gold foil - but they were just silly money, so not worth pursuing !!
