Changing to Vee brakes is more complex; they need brake levers which pull more cable, and the mounting points need to be further apart than the original cantilever mounts. I think they need to be about 80mm apart, against 65mm for original cantilevers; but my memory is not to be relied on.
I had always had the idea (though stress am not techie - and very definitely nowhere near as techie as you colin) that v brakes could be put straight on to canti mounts. I have converted three or four 700 wheeled 90s hybrids from cantis to Vs with no problems at all.
Originally cantilever boss spacing was narrower; eg in the sixties.
The boss spacing was widened at some time so that maybe eighties or nineties bikes built with cantis can take Vee brakes as a straight swap......apart from the cable pull of course. (or even mini-vees without swapping levers)
