Is this something to do with the vintage of the 27inch bike and its presumed mounting points?
I had always had the idea (though stress am not techie - and very definitely nowhere near as techie as you colin) that v brakes could be put straight on to canti mounts. I have converted three or four 700 wheeled 90s hybrids from cantis to Vs with no problems at all.

Originally cantilever boss spacing was narrower; eg in the sixties.
The boss spacing was widened at some time so that maybe eighties or nineties bikes built with cantis can take Vee brakes as a straight swap......apart from the cable pull of course. (or even mini-vees without swapping levers)

oh back again it has been xmas ,the bike is striped down, so i cant make my mind up what to do either to sell the bike or respray it,as regards wheels and brakes keeping with the mafacs,and poss stick with 27 in
