I presume you are asking about unvaccinated travel to England, in which case I believe the answer is here (the only commentary being from the likes of Grant Schapps)

I believe that entry restrictions have been lifted for both the Netherlands and Germany. the Netherlands government website still shows the EU ban on entry, but there have been news articles saying that they have reverted to pre-pandemic entry requirements.

The EU website doesn't appear to be kept up-to-date, either, so official sources of information are poor at the moment.

Fair enough regarding specific questions.
Our route would be from Denmark to Germany to The Netherlands then ferry to the UK. I'm not finding definative answers on unvax travel. So it makes me a bit hesitant.

You could try: https://reopen.europa.eu/en -- choose the 'travel plan' option and fill in your route there. (The info on the front page of the site is out of date, but a quick poke around suggests that the travel plan info is current.)

On a bright note, starting tomorrow the US will no longer require a test to enter!

The (Stena Line) Hook of Holland ferry does not go to Newcastle, it goes to Harwich which is about 240 miles south of Newcastle (upon Tyne). The (DFDS) ferry to Newcastle leaves from IJmuiden, which is the ferry port for Amsterdam (about 50 miles north of the Hook).

There is a third ferry from Europoort (Rotterdam) to Hull. Europoort is close to the Hook of Holland ferry port. This service is operated by P&O. They have recently got themselves into a bit of trouble after sacking all their sea based staff and replacing them with contract staff. This has led to a great deal of disruptions to services (including cancellations), so I would avoid them like the plague.
