I've not used my rohloff bike for about 5 years since returning from a long trip I did change the oil myself. But I've barely used it since then and not at all for 3 years.
Thinking of going on a 3 day trip next week but wondering if I should service it first or will it be ok?

I'd do an oil change, the recommendation is to do one every year, used or not, though I'm not sure it's entirely necessary. I'd also wheel it along a bit and see if the cranks turn with the wheel, there's a Rohloff guide to curing that, it involves tapping with a rubber mallet. Other than that, just check the gears are changing smoothly and the cables look in decent condition and it ought to be fine.

I have a Rohloff equipped tourer that sits in my brother's attic in Switzerland between European tours, so it's usually at least a couple of years between uses. I just perform an oil change on the hub each time I arrive, and then ride off.

I'd check the tyres too, probably change the tubes (if used). A small job, but you don't want to discover a perished tyre by the roadside if you can help it .

An oil change is much cheaper than a new rohloff hub!
