If you look after it well, the Shimano Tourney gearing is very long lasting, more so than the high-performance gear sets further up their range, which are to finer tolerances and less wear-tolerant.

Looking at the sizing for the Pinnicle, I’m about 5 foot 10 - 5 foot 11.
Officially that would be the higher end of large size 5” 7’ to 6’0. However, I don’t want to be riding in a particularly high position, so I’m not sure if I could get away with the xl on it’s lowest size of 6’ 0’?
According to the reviews, someone who is 6 foot upper range of the large had to buy the XL. So I’m not sure if since I’m on the upper end of a large fit, that I should go XL?

Putting guards and a rack shouldn't be a problem, plenty of options and good advice on this forum!
Don't let it put you off, as it won't effect the riding much, however the pictures of the bike don't quite match with the description at the following page:

Worked that one out when I phoned my local store, also it’s 21 speed not 24.

Do you ride this model / had it, or is the rule of thumb the measurements don’t have much leeway? You would probably find the XL makes you stretch out too far, even when adjusted to its shortest reach.

Is it worth going to my local Evan Cycles? Been advised in a couple of places that buying online probably isn’t the best idea as you have to pay for returns if it’s unsuitable and it can take a few weeks to process.

Got a friend who would sell a Carrera Virtuoso Mens Road Bike with improved wheels for £270. Not sure if this is a good deal or I’d be better getting the Pinnacle Lithium 1 for a similar price (£300)? Not sure how big the difference is between the 2 styles.
