So, a vandal unscrewed the top bolt and cap from my 2011-12 Carrera Subway.
I realise I may have to buy a complete new headset to replace the bolt and cap. I want to avoid buying one whose cap doesn't fit.
Neither Halfords staff nor their website could help with a spec for this bike's headset.

Halfords stock generic stem caps with bolt. £3.50. Check the sizing against Carrera bikes when you're there, if necessary. 99% of them fit.

most likely 'any' headset cap will fit. very surprised if you need a new headset for it.
Go into any mechanical bike shop, they will probably have a load sitting in the spares from headset replacements.
Suggest you double check the vandals did not try and undo the handlebars or stem as well.

Yes just a 1 1/8" top cap and bolt. Cheap.

Apparently, the initial response from Halford's was not entirely wrong in that it's not a part they stock routinely in stores, but one that needs to be ordered online. I hear you all telling me that a generic cap should fit, so I realise I'm not limited to Halford's, but I think I'll just order this one for delivery to save time looking around.

Honestly I'd go to any other bike shop and pick a standard one up. Half of them will even have some in the scrap bin. If you do order that one be sure to grease the bolt well as it purports to be T6 aluminum rather than the more usual steel.
