Rubbing Disc Brakes

I've had my current bike for a year. Just recently the front disc brake (Shimano Deore) has been rubbing on the rotor making a sound like a wasp.
I've tried loosening the mounting whilst applying the brake to try and centre it but it makes no difference. Anybody have any ideas?

Is the rotor flat?

Hydraulic or cable?

It's definitely the brake pads rubbing on the rotor and not the top of the calliper itself?
Have you tried cleaning/sanding pads down a bit?
It could be a very slight burr on one edge of the rotor, maybe worth having a close look and getting out the metal file if it looks like it needs it.
Have you tried tightening up the bolts holding the rotor (assuming it's a six bolt fixing and not centrelock), if these become loose then the rotor can move a fraction of a mm and cause odd noises.
Can't think of anything else to suggest, but will post again if I can.

If these are Deore cable disks, it's probably the inner brake pad needs adjusting closer to the disk, so the outer pad can be backed away from it.
On cable disks only the outer pad actually moves when you squeeze the lever. This pad presses the flexible disc against the inner pad. So: as both pads wear and as you tighten the cable to keep the brakes working, the clearance between disk and inner pad grows, whilst the outer pad gets progressively closer, until eventually it's a choice between rubbing brakes and no brakes.
With cable discs you need to remember to adjust the position of the inner pad whenever you tighten the cable.

Sorry, I should've mentioned that they're hydraulic

Are your brake pads worn?
I had a similar problem for a while. Shimano alfine hydraulic disk brakes. I also had
excessively worn brake pads (though I hadn't realised it). When I eventually changed
the pads, the problem went away. Could be just coincidence.
(My brakes sounded like a badly played violin
